Instructions
Cake
Preheat the oven to 180ºc/160ºc fan and line a 2lb loaf tin with parchment paper
Beat the butter and sugar together in a large bowl until creamy and combined
Add the vanilla and eggs, and mix again
Add the Guinness and mix through.
Add the cocoa powder and flour and combine.
Finally, add the milk and mix through.
Pour into the tin and bake in the oven for 50-60 minutes, or until baked through.
(only fill a tin 2/3 full - 2lb loaf tins vary in size so any spare mix can make cupcakes)
Leave to cool fully.
Topping
Beat together the room temperature block butter, with the icing sugar.
Add the vanilla extract and soft cream cheese
(Make sure to drain the soft cream cheese of any excess liquid first)
Mix as little as possible to combine
Slather or pipe the frosting on top of the cake and then grate over some chocolate
Notes
This cake will lsat in the fridge for 2-3 days (it must store in the fridge due to the cream cheese frosting)
The cake can freeze for 3+ months (that in the fridge overnight)
