Bright blue, deliciously chunky and packed with chocolate chips, cookies and oreos, these Cookie Monster themed cookies are the ultimate (and not at all scary) cookies – perfect for Halloween. They are soft, and gooey on the inside, with slightly crisp and crunchy edges whilst being absolutely loaded with goodies.

I love a cookie recipe as we all know, but I don’t think I’ve ever had as much fun as making these Cookie Monster themed cookies…. just look at them!

Inspired by the famous (and everyones favourite) Sesame Street character, I thought I would make a version of the classic Cookie Monster cookie – stuffed with chunks of oreo biscuits, cookies, and some chocolate chips they are delicious and they are FUN.

Whether you are baking for a birthday party, a celebration, or Halloween like when I am posting these, they are guaranteed to be a hit. I adore them, and they are just a bit of fun in the baking world.

Ingredient notes and tips

The cookie dough itself

I based this recipe on my classic chocolate chip New York style cookie because it’s tried and very well tested by millions of people at this point – and I just love them.

  • Butter – I would recommend using unsalted block butter or a baking spread. Block butter can be more towards room temperature, and baking spread can be cold out of the fridge.
  • Sugars – I use a mix of light brown soft sugar and granulated sugar – on this occasion, more white granulated that brown sugar because you don’t want to darken the cookie dough too much
  • Egg – I use medium eggs, but you can use a large egg too
  • Flavour – I use vanilla because I think it balances the flavour of the cookie dough well, but it is optional or changeable for a different flavouring you may prefer
  • Flour – I use plain flour – you can use self raising instead, but you need to not use the baking powder that is added later on
  • Raising agents – a little bit of bicarbonate of soda AND baking powder creates the perfect texture cookie – they are different to each other and cannot be interchanged
  • Salt – I use a sprinkle of sea salt chunks in my cookies. It is optional, but I think it balances the flavour. You can swap for a pinch of fine table salt, or salted butter

The colouring and flavours

Of course, the main part of these cookies is the theming behind them – COOKIE MONSTER!! You MUST use a strong blue food colouring because a supermarket colouring doesn’t work (just like how with a red velvet you need a good quality colouring)

I would recommend using any of the following colours (these are ones I have used myself):

As with other versions of these cookies that you will find online – the additions of cookies, oreos and chocolate chips are the best combination to make these the best bake possible.

I chop up oreos, I chop up shop bought small crunchy biscuits, and I add white chocolate chips (you can of course use other chocolate if you prefer)

Decorating a cookie for a theme

This part of the recipe is entirely optional, but I really think adds to the theme. The base cookie as it currently is, is cookie monster enough for me, but add on the monster eating a cookie and some eyes? They are even better.

I add in half of a cookie into the freshly baked out of the oven cookies and push it in so it’s as if the mouth of the monster is devouring one, and then I add on two white chocolate chips. I let these melt slightly, and then add on two edible eyes – you can pipe on a small amount of white chocolate instead, but just letting the chips melt themselves seemed easy enough.

Importantly – don’t worry if they are not perfect. He’s a crazy little character! I also like to add in a few extra bits of biscuit if needed when fresh out of the oven, but don’t worry if you don’t want to.

FAQs

My cookies are brown, what’s happened?

Unfortunately, you oven is running at too high a temperature and/or your oven has a hot spot. To bake something like this you need to know your ovens temperature very well. If it does run hot, you MUST lower it slightly to not tinge the cookies

My cookies are green, what’s happened?

You may have used the wrong colouring (See above) or not enough. The cookie dough needs to be super bright blue using a good quality gel/oil based colour before baking in the oven.

Can I make smaller cookies?

Yes, of course. I make 8 giant New York style cookies, at about 115g each – so you can half them to 55-60g each and bake for 8-9minute instead. Use mini chocolate chip cookies instead.

Can I prep these and bake later on?

For sure – you can prep the cookie dough and portion into the cookie sizes you want, and then freeze raw. You can bake from frozen, adding 1-2 minutes baking time (keep an eye on the colouring)

Ingredients

Cookies

  • 125 g unsalted butter/baking spread
  • 125 g granulated sugar
  • 50 g light brown sugar
  • 1 medium/large egg
  • 1 tsp vanilla
  • 1 tsp strong blue food colouring
  • 275 g plain flour
  • 1 + 1/2 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 1/2 tsp sea salt
  • 100 g white chocolate chips
  • 100 g oreos (chopped)
  • 100 g cookies (chopped)

Decoration

  • extra cookies
  • extra oreos
  • extra chocolate chips
  • edible eyes

Instructions

  • Add the butter and sugars to a bowl and beat until creamy
  • Add in the egg and vanilla and beat again.
  • Add the blue food colouring and mix
  • Add in the plain flour, baking powder, bicarbonate of soda, and salt and beat until a cookie dough is formed
  • Add in the chocolate chips, chopped oreos and chopped cookies and mix briefly to combine
  • Split the cookies out into eight cookie dough balls – they're about 115g each
  • Once they're rolled into balls, place the cookie dough in the freezer for at least 30 minutes, or in the fridge for an hour or so
  • Whilst the cookie dough is chilling, preheat your oven to 200ºc/180ºc fan
  • IMPORTANT – if your oven usually runs HOT and browns things, you will need to lower the temp so it doesn’t brown the cookies. If you are worried, test bake ONE cookie and adjust accordingly
  • Take the cookies out of the freezer/fridge and put onto a lined baking tray. I put four cookies per tray
  • Bake the cookies in the oven for 11-13 minutes.
  • When fresh out of the oven – press in any extra bits for decor
  • I add half a cookie and use white chocolate chips to stick down the eyes (they melt on the hot cookie) and a few extra bits of biscuit
  • Let the cookies cool on the trays for at least 30 minutes, as they will continue to bake whilst cooling!

Notes

  • These are best eaten on the day of baking, but can be revived by microwaving for 15-30 seconds, or putting into a hot oven for 2-3 minutes!
  • Once baked, these will last for 4-5+ days
  • You can use chocolate bars chopped up instead of chocolate chips, just make sure the chunks aren’t too big
  • These can freeze raw before baking for 3+ months, just add 1-2 minutes baking time.
  • Baked cookies can also freeze for 3+ months. 

Storage and Freezing

  • These are best eaten on the day of baking, but can be revived by microwaving for 15-30 seconds, or putting into a hot oven for 2-3 minutes
