    Hi Jane . I love your recipes, they work well and taste wonderful. DO you have a recipe for vegan banana muffins or cupcakes? I bake as a volunteer for a community enterprise and we are over-run with bananas and it would be nice to make something for vegan customers.

    Hi Jane, Im thinking to bake a orange loaf cake. Would it be the same concept as the lemon loaf cake but change to orange zest/extract instead of lemon? I have a love of chocolate orange and feel like a orange loaf cake would taste amazingggggg.. Although I may be wrong.🙈.

    Ps, I think your recipes are fab and everyone always compliments the cakes whenever I bake them.

    I have a few tins of satsumas in syrup, do you have any idea what I could make cake/dessert wise out of them?

    I am looking at doing one of your no churn ice cream. I have done the biscoff before and it came out lovely.
    Are there any you can do with frozen fruit, like strawberry or cherry?

      Hey! So I haven’t just added frozen fruit in before, but I do have a black forest ice cream recipe coming soon which uses fresh cherries! You can also use frozen fruit to make a coulis that can be used!!

    Hi, love your blog. I just wondered, do you need dowels when making one of your 4 layer cakes? There isn’t any mention of them (apart from on your tiered wedding cake-amazing btw) but just wanted to double check that it’ll be stable enough without?
    Also, how many people would an 8 inch 4 layer cake serve?

      Hey! Thank you! For me personally I only use dowels for tiered cakes as they do need them – but as long as your cake is sturdy and so on, I don’t dowel layered (single tier) cakes! Serving wise it depends – usually I would say at least 15 for a decent portion size!

    Hi Jane, I’ve made quite a few of your recipes now and they always turn out great! Everybody seems to love them. I wanted to know in your opinion which cocoa powder do you think works best for a really strong chocolatey flavour please? I have spotted Hershey’s which looks good as it’s 100% cocoa – no sugar which I could use for drinks too. Have you used it, would you think it would be too strong in recipes? Thanks in advance

      I use Barry Cacao Extra Brute which I buy from Makro which is a 100% powder, or Dr Oetker Extra Dark cocoa powder! X

    Hi, i made your terrys chocloate orange millionaires shortbread, followed every step. The caramel was set lovley in the fridge i took it out to put the choc on top & left to set… when it was ready the caramel was runny can you recommend what i did wrong please? Thanks

      Oh that sounds a little strange – it shouldn’t be runny? Do you mean it was soft? But it’s always hard to tell for certain until its cut. Put it back in the fridge and it’ll firm a bit.

    Hello I’ve tried making your slutty brownies and the cook time is 25mins but my brownies do take much longer to make? What could be the cause of this?

      As the cookie layer doesn’t take too long, and the brownie is technically only a half batch it only takes 25 minutes. The ones in the photos were in for 27 minutes, and were slightly over baked! If yours are taking ages, then your mix is most likely too thin, or your oven is the wrong temp!

      Hmmmm… could this be because I ain’t letting the melted choclate cool down for long enough? Could this cause the mixture to be runny?

      It shouldn’t be – if you melted the chocolate first, and then whipped the sugar and eggs to a really thick mixture it should be fine. It really shouldn’t take that long to bake. If you didn’t mix it correctly, or the oven temp was off like I said, then thats usually the reason.

    Jane I just have to say I ADORE your site and I can’t tell you happy I am that you are British and use our measurements because I too hate cups and sacrifice so many recipes because I would rather use grams. Your mini egg fudge has went down such a treat at work one of my fellow colleagues asked me to make him an entire batch for him and his family! Thank you and keep baking! P.s really hoping I win a bread maker! Although no clue where to put it in our already very full kitchen!

      Hi, I don’t know if anyone has already gotten back to you but I imagine any cake would be suitable for a 3 tier as long as you have the correct supports, dowels and boards in packs to ensure it doesn’t weigh itself down/collapse.

    I need your help! I have offered to try and make a profiterole croqembouche for Xmas dinner and I’ve just tried to make them for a test run and some came out ok and in a good shape but they tasted like Yorkshire puddings 🙈 I know I think I need to cook them for longer but I’m just totally stuck!     I have made a few of your recipes and they have all come out amazing! The chewy chocolate cookies are a massive hit with my work colleagues, I’ve tried a few different cookie recipes before I found your blog and none come close! Also I’ve made a few of your cupcake recipes and everyone says they are the nicest cupcakes they have ever eaten. My new challenge is your chocolate fudge cake.       Hiya! And thank you! At the moment it’s not something I am looking into doing as I have no knowledge of diabetic friendly baking, and it’s too risky to get it wrong and someone eat something they shouldn’t. I’m sure there are lots of good recipes online that you could use! x

      It might be that it got a smidge too hot. Did you use the right quantities of dark and milk? If you use a chocolate such as cadburys it can make it a lil’ soft, or just milk for example can make it softer as well.

    Hi Jane, I made your Elton mess cake recently, absolutely gorgeous btw, but I was wondering why you add icing sugar to the cream when you whip it? I tried this and it it turned the cream into a soggy wet mess, ended up using plain whipped cream on the cake instead. Love your blog, keep,up the good work!!

      Its designed to stabilise the cream and makes it easier to use. I do it on all my cheesecakes as well for the decoration whipped cream. I’m not sure how you got a soggy wet mess unless you over-whipped it x

    Hi Jane, the shortbread looks so neat and tidy after the slicing. Do you use a normal knife or Serrated knife? Any tips on how to slice them? even the Maltesers look straight cut! I’m impressed!

      I just use a large 26cm ‘normal’ knife. It’s very sharp, so its easier to cut.

    I have made a few of your cheecakes now that have melted chocolate in them I find when I pour my chocolate in (I keep my stand mixer running while I do it) it ‘siezes’, is this because I have allowed my chocolate chocolate to cool too much or not enough ? Love the reciepes tho so tasty 😍?

    I am wanting to make a treat for my partner who is in Afghanistan at the moment! The treat needs to be able to last around a week until it arrives! What would you suggest would be the best to bake?? Also, he’s not a fan of anything with fruit in really, so fruitcakes are a no no! Thankyou

      It can often depend on which ones you buy for a start, and whether the oven is at the correct temperature. Make sure you use a good type of baking case, you can find links to the ones I use on my cupcake recipes, and if that fails, put a tsp of uncooked rice at the bottom of the muffin tray as it absorbs the grease! x

      I also meant “consistently”, not “consisting”. That’s what a night of insomnia will do to you. 🙂
