Easy and delicious oreo muffins with a vanilla muffin mixture, stuffed with oreos and chocolate chips and a delicious decoration on top. 

An easy and simple go to muffin recipe that is so full of the oreo flavour, and so incredibly easy to make… what more could you want?!

Oreo bakes

Baking any recipe with oreos is quite classic and common in the baking world, and I am absolutely here for it. It’s been over a year since I last posted an oreo recipe with my oreo cheesecake brownies which are utterly glorious, and I am SO excited to share another one with you now. 

I love to put oreos into buttercream such as in my oreo cupcakes, I adore using the biscuits for a base and a filling in my oreo cheesecake, and even making a giant oreo drip cake because I adore them. Yes, it may seem a little basic, but they’re such a good biscuit to bake with. 

The balance of the flavour of the oreo biscuits themselves and the sweet vanilla like creme centre works no matter what you are putting the oreos inside of, and especially in these, it works SO well even on a deliciously basic bake. 

Muffin recipes

I feel slightly odd having to say this, but muffins and cupcakes are not the same thing. Sometimes, people call cupcakes muffins, and that is totally fine… but when I say muffins, I mean a sweet baked muffin that is cake like, but not something you decorate like a cupcake. 

I feel like I have always shied away from posting too many muffin recipes as I worried that people thought they were boring, but the more muffin recipes I develop and make the more I realise you all love them. 

I recently shared my lemon curd muffin recipe and it was such a success. It’s such a simple muffin batter that you can mix together with a spoon in a bowl and it works wonders. I wanted to share even more muffin recipes as you all seem to adore the simplicity of them as much as I do. 

Oreo muffins 

A large bowl and spatula or spoon, and mix this beautifully easy muffin mixture together for an easy and simple bake. 

  • Butter – I always use unsalted butter in baking, or a baking spread, when it comes to a sponge mix like this
  • Oil – I use vegetable oil, or sunflower oil in my bakes as they’re tasteless and interchangeable – avoid olive oil.
  • Sugar – I use light brown soft sugar, but golden caster sugar is a good idea, as well as regular caster or even dark brown soft sugar. 
  • Eggs – you only need two medium eggs, but two large should be fine as well 
  • Flavour – I add vanilla extract, even thought the oreos bring some sweetness 
  • Flour – Plain flour is best, and then a little baking powder for the perfect bake. Self raising flour may make them too airy 
  • Buttermilk – you can buy buttermilk in the shop, but you can also make your own with whole milk, and 1tsp lemon juice mixed in, 5 minutes before using in the recipe is how to make your own 
  • Chocolate – I used some white chocolate chips, but a chopped up bar of chocolate works wonders – anything you have in the cupboard really. 

Decoration

When it comes to the decoration of a muffin like this, I just wanted to do a little something to make it pretty, and a little more delicious. I will say that the decoration on a muffin like this is entirely optional, and you don’t have to do it. 

  • Oreos – before baking, I sprinkle on some extra oreo chunks just so that they are on top of the muffin and on show as they bake.
  • A water icing – I mix icing sugar, with a drip of vanilla (optional) and mix with a little water to a thick paste so that you can drizzle it over the baked muffins
  • …Oreos – and if you want, you can add on even more oreo here. I will say, these muffins are best to bake when oreos are on offer!

Ingredients

Muffin mix

  • 75 g unsalted butter (melted)
  • 75 ml vegetable oil
  • 175 g light brown soft sugar
  • 2 medium eggs
  • 1 tsp vanilla extract
  • 250 g plain flour
  • 1 tsp baking powder
  • Pinch of salt
  • 125 ml buttermilk
  • 150 g milk chocolate chips
  • 150 g oreos (chopped)

Decoration

  • extra oreos
  • 75 g icing sugar
  • 1-2 tbsp water

Instructions

  • Preheat the oven to 180ºc fan and prep 12 tulip cases 
  • Add the melted butter, oil, sugar, eggs and vanilla to a bowl and mix together
  • Add the flour, baking powder and salt and mix in until smooth
  • Add the buttermilk and stir together
  • Add the chocolate chips and chunks of oreo and stir in
  • Split between 12 tulip cases evenly
  • Sprinkle an extra couple of crumbs of oreo on top if you want
  • Bake for 22-25 minutes until golden and leave to cool for 20-30 minutes
  • Mix the icing sugar and water together to a thick paste
  • Drizzle over the muffins, and decorate further with extra oreo crumbs if you want
