A delicious and easy favourite for so many households, a throw together sausage traybake that’s perfect for dinner! 

This recipe takes minutes to throw together, cooks really easily in the oven, and then is absolutely delicious to devour. It’s an easy favourite of mine and my family, so you should definitely give it a go as well. 

Easy favourites 

As you may have noticed, I have started to post more and more savoury recipes because I absolutely adore cooking. I always want to post recipes that people will love, but I have a passionate love for all things savoury as well as sweet. 

So far I have always tried to make my recipes as easy as possible and as straightforward as possible, and this one is definitely one of them. It’s so easy to put together, it’s a definite favourite that even my mum used to make the family many years ago and I love it. 

Savoury recipes

So far I have posted a few delicious recipes onto this blog under the savoury category, such as my creamy garlic chicken, my macaroni cheese and my chicken, leek and bacon pie. They are all super easy favourites of mine, and I wanted to post another. 

This delicious savoury recipe is something that most families already make, but I wanted to inspire those who maybe haven’t tried it already, or give a little idea for dinner if you’re a bit stuck on what to make. 

Vegetables 

When it comes to the vegetables, you can use pretty much anything you want. I tend to use a combination of new potatoes, onions, carrots and peppers and so on. I find if a new potato us chopped into a quarter or half, the carrots and peppers are 1″ size cubes or pieces, the onions are chopped up roughly, it works wonders. 

Other vegetables you can use are ones such as baby corn, courgettes, anything you have in your fridge that can roast in the same or less amount of time as new potatoes do. I have used sweet potatoes, I have used broccoli, I have used all sorts. 

Sausages 

It’s always best in this, because it’s meant to be a throw together dinner where you can shove it into your roasting tray, add the oil and flavours, and then turn once during the cooking… you want to use regular sized sausages, not chipolatas. 

I used some delicious caramelised onion sausages from the supermarket, but you can use any. Any sausage works – whether it’s the cheapy cheap ones, chicken ones, vegetarian ones, just make sure they are regular sized. 

Serving

This recipe serves 3-4, depending on your appetite, but the idea is that you can multiply up the amount of ingredients you are using if you want to serve more. I sometimes serve mine with some extra green veg on the side, and a good serving of thick gravy. 

It’s really hard to say for certain how much a recipe can serve, as some people will eat double compared to others, so go with your gut. I usually say it’s 2-3 sausages per person, but my other half would eat the entire packet so you do you, boo. 

Tips & Tricks 

  • I use a large sized roasting dish, if you double the recipe to serve more people you may want to split it across two dishes so that the dish cooks evenly.
  • Other vegetables you can try: courgettes, broccoli, baby corn, sweet potato, etc. 
  • You can use any sausage flavour, I used caramelised onion.
  • You can use other potatoes, but I find new potatoes once chopped cook well within the time without needing to be par-boiled before hand.  
  • I love serving this with gravy, but that’s up to you!

Ingredients

  • 2 white/red onions (1" chunks)
  • 2 large carrots (1" chunks)
  • 2 peppers (1" chunks)
  • 300 g new potatoes (1" chunks)
  • 500+ g sausages of choice
  • 1-2 tbsp olive oil
  • 2 tsp dried thyme
  • 75 g honey
  • 2 garlic cloves (finely sliced)
  • salt & pepper

Instructions

  • Preheat the oven to 210ºc/190ºc fan and grab a large oven proof baking dish
  • Add the chopped onions, carrots, peppers, new potatoes and sausages to the dish
  • Drizzle over the olive oil and honey, and sprinkle over the dried thyme and garlic
  • Season with salt and pepper and toss everything together so everything is coated well
  • Bake in the oven for 20 minutes, toss everything again, and bake for another 20 minutes.
  • Once cooked, serve immediately
