Easy chocolate chip microwave cookies for two made with only six store cupboard ingredients, and ready to eat in five minutes. They are warm, gooey and perfect served with a scoop of ice cream on top for a super luxurious pudding. I have made this recipe near enough 100 times myself they are THAT quick and good.

Recently I shared my recipe for my triple chocolate cookie dough desserts (which is baked, so just a gooey cookie), and you all LOVED it! I reckon that beauty can be made in a microwave as well, but there is quite a bit too it. There is a lot more cookie dough as well, so you would probably end up with six or so, but delicious.

I therefore decided that I should post this beauty, my microwave cookies for two recipe. I thought about whether I really wanted to try it – because I love making these so much I wanted to be selfish and keep it to myself. I realise that as I am a dessert blogger, this would make no-sense at all.

Using a microwave in baking

The success of these, rely on you know how good your microwave is. I have a 1000W microwave, so it doesn’t take too long to make the cookies at all. However, if you have only a 750W, the timing could be longer. It’s basically impossible for me to give exact timings for everyone who will read this blog, but one or two practice runs won’t hurt!

As you make two of these at the same time, the timing might seem quite long, but if you put two things in a microwave they naturally will take longer to cook in comparison to one. I would say in my microwave one of these would only take 45-50 seconds, but with two in there, it takes 70-90 seconds!

Vanilla or chocolate?

But anyway – these are a ‘vanilla’ cookie you could say – you could add in cocoa powder to make them more chocolate like, if that is what you prefer (I would swap 10g of flour for cocoa). My chocolate mug cakes were chocolatey, and suitably different to these, but if you are after something with more chocolate in then definitely go for those instead!

I do tend to do this in a different bowl, and then add into the mugs because it’s a little bit more work, and I want to make sure everything is suitably mixed, which is why I didn’t call this a ‘mug cookies’ recipe – but you could probably get away with it if you were careful enough! If I am feeling extra lazy, I will use my electric hand whisk to mix it as it’s so much quicker!

Baking tips!

The weird thing about anything ‘baked’ in the microwave is that often the top of the cookie/cake doesn’t look baked. It can have a wet look, like its still raw batter, but in reality it is baked perfectly, or even over done! I always tend to test one quickly with a little scoop out – but then cover in ice cream or extra chocolate!

Ingredients

  • 35 g unsalted butter
  • 45 g light brown sugar
  • 1 medium egg
  • 1/2 tsp vanilla
  • 90 g plain flour
  • 50-100 g chocolate chips

Instructions

  • Add your butter and sugar to a bowl, and beat together!
  • Add the egg, flour and vanilla and beat again.
  • Add in the chocolate chips and mix in, and split evenly between two microwave safe mugs/ramekins!
  • Microwave for 70-100 seconds, and keep an eye on it!
  • Serve with extra chocolate, ice cream or anything! 

Notes

  • I use two ramekins for these – which are a decent size but it makes the cookie look ‘full’. You can use any mug that is microwave safe but the cookie doesn’t really rise so beware of that!
  • You can add in 15g of cocoa powder, and use 75g of plain flour if you want them chocolate themed! 
  • Best eaten warm and fresh.
  • The cookie make look raw a bit on top, but its always more cooked inside so make sure to check! 
  • In my 1000W microwave, these take 70 seconds!

    Hi!
    I’ve just made this and it was really tasty, but I was definitely more sponge texture that cookie dough :/ any ideas?! I followed the recipe and cooked in glass ramekins like the ones from GU desserts. The top was still gooey and middle cooked, but as I say very much like sponge rather than cookie. Any tips would be great!

    Hi Jane,
    I’m so excited to try this recipe, all of your other cookie recipes have gone down a treat!
    I was just wondering, do you think it’s possible to pre these during the day then put the ramekins in the fridge and then microwave after dinner in the evening? Or would this have too much of an affect on the coolie dough?

    I love cookie dough so I am hoping to make some of these real soon, just wanted to check with yourself, (1/2 tsp Vanilla)
    is this Vanilla Extract. may be a dumb question here just wanted to check with yourself.

      Yes – I would never use vanilla essence as it’s nasty stuff, but vanilla bean paste, or vanilla pods, or vanilla extract!
